Roast in the crockpot?


If you're taking advantage of the free potatoes and onions at shaw's this week here are some good tips if you're on the go like me and like using the crockpot.

1.) General rule of thumb you want to add enough water, beef stock, or beef broth to half cover the roast itself. Why? Because a crockpot is designed to simmer liquid and if you don't you'll end up with a really dry roast. Also flip it about half way through.

2.) Put the fatty side down. Especially if you're making gravy. This cooks the fat at a hotter temperature so it breaks down faster.

3.) Use root vegetables with beef. Potatoes, parsnips, onions, and carrots are really good choices. Mushrooms are good too. The above picture I have potatoes, onions and carrots in my crockpot.

4.) Save the leftover broth. Freeze it for a good go to base for soups and stews. Also an excellent way to get rid of the leftovers.

5.) Spices? I like to use a lot of pepper base spice mixes when I'm making beef. A little garlic powder is also nice but don't use to much of that a pinch or two will do you.

What about gravy? If you're like my mom and most of my family homemade gravy is complicated. Haha. Guys i love yah.

Here's a simple way to make about 2 cups of gravy. Plenty for even a big family.

1/2 Cup butter
1/2 Cup flour
2 1/2 cup broth

Melt the butter in a small pot.
Stir in the flour.
let the butter and flour combine until they are a golden brown color. THIS IS VERY HOT! BE VERY CAREFUL! This is called Roux. you can let it get darker but I like a nice golden brown, it has a certain nutty flavor that gets stronger the darker you let it get.
carefully and slowly incorporate the broth.
Let this mixture come up to a slight boil, take a quarter of the pan off the heat.
you will see flour come up to the top, spoon it off.
and with that you're gravy should be finished!

Not Your Momma's Lasagna


Add Image

Ingredients:
1 - 1.5 lbs of Ground Beef
2 cups Shredded Mozzarella Cheese
1/4 cup cubed pepper jack cheese
1/4 cup cubed white cheddar cheese
2 cups ricotta/cottage cheese
2 cans of Hunts Pasta Sauce
1 box oven ready lasagna noodles
1 cup green peppers
1 cup onions

Cook the beef on the stove with the peppers and onions.
Mix together pepper jack cheese, cheddar cheese and ricotta.
Pour about a cup of the pasta sauce into the bottom of the pan.
Layer on top lasgana noodles.
Alternate layers of the ricotta mixture and the meat mixture, add about a cup of sauce per meat layer.
top with remaining sauce and the 2 cups of mozzarella cheese.
Bake for 30-45 minutes on 350.

Bonus Recipe! Cheap Easy Banana Bread





I made this one day as an experiment, it turned out really well. Tasted good and looked nice! Then I tried it with blueberry bread mix and it turned out too!

1 box (15.5 oz) Betty Crocker® banana nut muffin mix
3/4 cup milk
1/4 cup vegetable oil
2 eggs
1 - 2 Bananas ( optional)



  1. Heat oven to 375ºF. Grease bottom of 8x4-inch loaf pan with shortening or cooking spray.
  2. In medium bowl, stir muffin mix, milk, oil and eggs just until blended. Spread batter in pan.
  3. Bake 45 to 50 minutes or until toothpick inserted in center comes out clean and top of loaf is golden brown. Cool 15 minutes. Run knife around edges of pan before removing; remove from pan. Cool completely before slicing, about 45 minutes.

Dinner For Cheap, Recipe Of The Week




Ive been working all week so I really haven't had time to experiment. So yall are getting a simple easy oldy but goody.

Crockpot Chili:
1 Cup Water or Beef Stock
3 Cans Tomatoes Hunt's $0.92 Each
4 Cans Beans About $1 Each
1 lb. Ground Beef
1 Green Pepper
1 Packet Chili Mix $0.99 Mccormick
1/2 cup Onion
1 Habenero (optional)
1 Jalepeno ( optional)

Estimated Cost: $11.96
Estimated Cost Per Portion( about 12): Around $1

Cook the groundmeat in a skillet until browned. Pour pack of chili mix and cup of water stir. Add Peppers and onions to the skillet leave in skillet until the onions are semitransparent. Pour the 3 cans of tomatoes into the crockpot, drain the beans and add them to the pot. Add the ground meat mixture.
Cook for: 4-5 hours on Low or 1-2 Hours on high.
I prefer the lower one just because it really adds good flavor.

Bonus Recipe! Chocolate Chip Cookies




Now everyone's had chocolate chip cookies. But these are my family's favorites! I bet you can't eat just one! We can't!
2-1/4 cups all-purpose flour $2.99/ Pillsbury 5 Lbs.
1 teaspoon baking soda
1 cup butter, softened $1.99/ 1 Lb. Shaws
3/4 cup packed brown sugar
1/4 cup white sugar $2.78
1 (3.4 ounce) dry package instant vanilla pudding mix $0.79
2 eggs $1.62
1 teaspoon vanilla extract $1.99
2 cups semisweet chocolate chips ( or reese pieces, M&Ms, etc) $3.00ish
1 cup chopped walnuts (optional, I don't use them)

To Buy all of the above: $15.16
Cost per cookie: $0.30

Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.
When you take them out they might look a little under cooked, but let them sit on the tray a little longer and they'll turn out just perfect!
Makes about 36 cookies.

Big Splurge of the week Dessert recipe.





Most of these items should be in your pantry/fridge but the few things you might need ( Confectioner's sugar and pie crust) aren't horribly expensive. :)


Peanut Butter Pie:
Meringue:
3 Egg Whites, room tempature
1 Pinch Salt
1 cup confectioner's sugar
1 tsp vanilla


Pie:
3 egg yolks, beaten
1 pinch salt
2 1/2 cups milk
3/4 cup white sugar
1/4 cup all-purpose flour
1 teaspoon vanilla extract
1 1/2 cup creamy peanut butter

Crust:
Store bought pie crust of your choosing I like the cookie crust but that's just me.

Estimated Cost = $19 For everything.
Cost Per Pie: $12
Cost Per slice: $0.75


1.) Preheat oven to 350 Degrees
2.) Put you're pie crust in the oven for about 15 minutes, so it's light brown but not quiet done.
3.) In a medium saucepan, whisk together egg yolks, salt and milk. Cook over low heat, stirring constantly until warm.
4.) In a small bowl combine sugar and flour. Mix well and gradually whisk into milk mixture. Continue to stir mixture constantly until thickened. Remove from heat.
5.) Take your crust out of the oven
6.) Add vanilla extract and peanut butter to milk mixture. Stir until smooth. Pour into baked pastry shell.
7.) Pour peanut butter mixture into pie crust and bake for about in hour. Cover edges of pie crust with foil.
8.) Whip the 3 eggs until you get stiff peaks, when you take the beaters out of them points will be standing up in the bowl
9.) Gradually mix the sugar and salt into the meringue mixture
10.) Add vanilla
11.) Beat back up to stiff peaks
12.) Take you're pie out of the oven. Turn on the broiler.
13.) Take foil off the crust and take a spatula and spread a layer of the meringue onto the pie, make sure it goes over the top crust.
14.) put the pie under the broiler for 3-5 minutes until meringue is golden brown
15.) take pie out and leave at room temperature until serving then put in refrigerator.
