Big Splurge of the week Dessert recipe.





Most of these items should be in your pantry/fridge but the few things you might need ( Confectioner's sugar and pie crust) aren't horribly expensive. :)


Peanut Butter Pie:
Meringue:
3 Egg Whites, room tempature
1 Pinch Salt
1 cup confectioner's sugar
1 tsp vanilla


Pie:
3 egg yolks, beaten
1 pinch salt
2 1/2 cups milk
3/4 cup white sugar
1/4 cup all-purpose flour
1 teaspoon vanilla extract
1 1/2 cup creamy peanut butter

Crust:
Store bought pie crust of your choosing I like the cookie crust but that's just me.

Estimated Cost = $19 For everything.
Cost Per Pie: $12
Cost Per slice: $0.75


1.) Preheat oven to 350 Degrees
2.) Put you're pie crust in the oven for about 15 minutes, so it's light brown but not quiet done.
3.) In a medium saucepan, whisk together egg yolks, salt and milk. Cook over low heat, stirring constantly until warm.
4.) In a small bowl combine sugar and flour. Mix well and gradually whisk into milk mixture. Continue to stir mixture constantly until thickened. Remove from heat.
5.) Take your crust out of the oven
6.) Add vanilla extract and peanut butter to milk mixture. Stir until smooth. Pour into baked pastry shell.
7.) Pour peanut butter mixture into pie crust and bake for about in hour. Cover edges of pie crust with foil.
8.) Whip the 3 eggs until you get stiff peaks, when you take the beaters out of them points will be standing up in the bowl
9.) Gradually mix the sugar and salt into the meringue mixture
10.) Add vanilla
11.) Beat back up to stiff peaks
12.) Take you're pie out of the oven. Turn on the broiler.
13.) Take foil off the crust and take a spatula and spread a layer of the meringue onto the pie, make sure it goes over the top crust.
14.) put the pie under the broiler for 3-5 minutes until meringue is golden brown
15.) take pie out and leave at room temperature until serving then put in refrigerator.
