Stuffed Peppers in the Crockpot
I don't know about you but I love love love my crockpot! It's amazing! So here's a stuffed pepper recipe you can do in your crockpot. It makes 4 servings, because that's what fits in mine. Feel free to alter it to fit your crockpot. This is a more expensive meal then normal, but in the summer if you have a garden where your growing peppers it will make this meal really cheap!
2 Small cans of tomato sauce ( $0.39 each)
1 cup water
2 Green Peppers ( About $3)
1 1/2 cups rice ( $1)
1 - 1 1/2 lb Ground Beef/sausage ( About $2)
Oregano, Garlic, and Thyme ( plus any seasonings you like)
Per Serving: $1.69
Per meal: $6.78
Cut the peppers in half clean out the seeds and membrane ( white part)
Brown the ground meat in a pan.
Add one can of tomato sauce.
add rice and seasonings.
Stir together let sit about 5 minutes.
Put ground meat mixture in peppers.
Put other can of tomato sauce, a pinch of each spice and water in bottom of crockpot.
Set peppers on top.
Cook about 2 hours on high, and 1 hour on low
